A Low Creativity Cooking Week
I hate to admit it, but last week I was feeling, well, uninspired…. So sorry to disappoint! I had a fair amount of random chopped salads, even a few worth talking about, but managed to conveniently forget to record or to photograph many. Woops! Sometimes I forget that I have a blog audience to keep entertained!
I did discover an amazing miso marinade, and have used it for both tempeh and tofu to great success. Thank you, Alexa at Sustainable Pantry! I of course made a few adjustments, ‘cuz I can’t help myself – replaced the rice wine vinegar with regular white wine, used a bit less oil and omitted the sesame seeds altogether. Check these two dinners out:
On the left is pretty much the exact recipe, served up with plain old steamed green beans (with salt, pepper & olive oil) and some spelt grains with chopped basil and tomatoes. On the right is the same marinade but with tofu, broiled instead of roasted (I was hungry & in a hurry – broiling only took about 3 minutes per side) and served up with a mega huge green salad. I promise there are other veggies under the pile!
So what else? I made a luscious creamy spelt salad with corn and chopped romano beans and went crazy with baked kale chips (gratitude to Peas and Thank You for the BBQ topping!) and green bean ‘french fries’ (using the same spices).
I used up the last of our frozen wild alaskan salmon and served it with a side of steamed bulgur and a black olive sauce. I am reluctant to call it a tapenade, because there were no capers and it was a little thinner and sauce-like rather than a thick dip, and it hues closer to a pesto, since it had a (almost inhumanely) large amount of garlic, as well as parsley and basil.
And there were many many green smoothies… My latest crush? Kale, peaches, vanilla protein powder, a dash of vanilla extract, some soymilk and ice. Throw it all in the VitaMix and blend away! (Those without this wonderful machine should blend the kale with some water first to break it down, then add everything but the ice, and only at the end top it with ice cubes.) Yum yum yummy.
